🍽️ Ingredients:

  • For the Edamame Hummus:
    • 1 1/2 cups shelled edamame (cooked or thawed from frozen)
    • 1/4 cup tahini
    • 2 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 garlic clove, minced
    • Salt and pepper, to taste
  • For the Poached Egg:
    • 1 large egg (per serving)
  • For the Balsamic Glaze:
    • 2 tbsp balsamic vinegar
    • 1 tsp honey or maple syrup (optional, for sweetness)
  • Extras:
    • Fresh herbs (like parsley or mint) for garnish
    • Optional chili flakes or seeds for crunch

🔪 How to Make It:

  1. Prepare the Edamame Hummus:
    In a food processor, combine edamame, tahini, olive oil, lemon juice, and garlic. Blend until smooth, adding water as needed to reach your desired consistency. Season with salt and pepper. Set aside.
  2. Poach the Egg:
    In a pot of simmering water, gently crack the egg into a small cup. Stir the water to create a gentle whirlpool and slowly drop the egg into the center. Poach for 3-4 minutes, until the white is set but the yolk remains soft. Remove with a slotted spoon.
  3. Prepare the Balsamic Glaze:
    In a small saucepan, combine balsamic vinegar and honey (if using). Simmer over medium heat for 5-7 minutes, stirring occasionally, until it thickens into a glaze.
  4. Assemble the Dish:
    Scoop a generous portion of the edamame hummus onto a plate. Top with the poached egg, drizzle with balsamic glaze, and garnish with fresh herbs and optional chili flakes or seeds for added crunch.
