Lunch just got an upgrade! This Protein-Packed Radicchio Citrus Salad is not only vibrant and flavorful but also loaded with plant-based protein from almond tofu and edamame beans. Perfect for a nourishing, refreshing meal, this salad brings together the crunch of radicchio, the zesty brightness of citrus, and the creamy texture of tofu.

Ingredients

  • Base: 4 cups chopped radicchio and a handful of arugula or baby spinach.
  • Citrus: Segments of 1 orange and 1 grapefruit (or any seasonal citrus you love).
  • Protein: Cubed almond tofu and a cup of shelled, steamed edamame.
  • Extras: Optional toasted nuts like almonds or walnuts for added crunch.
  • Dressing: A zesty vinaigrette made from 3 tbsp olive oil, 2 tbsp citrus juice, 1 tbsp apple cider vinegar, 1 tsp Dijon mustard, salt, and pepper to taste.

Method
