A creamy, protein-packed breakfast served with fitness bread and avocado slices for a perfect start to your day.

Ingredients:

  • 2-3 eggs
  • 2 tbsp goat cheese (crumbled)
  • 1-2 spring onions (finely chopped)
  • Salt and pepper, to taste
  • 1 tsp butter or olive oil
  • 2 slices of fitness bread
  • 1/2 avocado (sliced or smashed)

Method:

  1. Prepare the Egg Mixture: Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk lightly.
  2. Cook the Eggs: Heat butter or olive oil in a non-stick pan over medium-low heat. Pour in the eggs, stirring gently to form soft curds.
  3. Add the Goat Cheese: Just as the eggs begin to set, fold in the goat cheese and continue stirring until the cheese is melted and incorporated.
  4. Finish with Spring Onions: Sprinkle the chopped spring onions over the eggs in the final moments of cooking. Remove from heat before the eggs dry out.
  5. Plate & Serve: Serve the scrambled eggs on a plate alongside slices of toasted fitness bread and fresh avocado. Garnish with extra spring onions, if desired.

Tips:

  • Mash the avocado with a squeeze of lemon juice and a pinch of salt for added flavor.
  • Fitness bread, often made with whole grains and seeds, provides extra fiber and nutrients to keep you fueled.
